Berry Bliss Balls

These easy energy balls make a delicious and nutritious snack! You can also substitute the dried berries for other dried fruits (such as apricots, raisins, prunes etc) to get other tasty variations.

Ingredients
(makes 30-40 balls)
1/3 cup seeds or nuts (sesame seeds, chia seeds, almonds, cashew etc)
1/3 cup unsweetened shredded coconut
1/2 cup dried blueberries
1/2 cup dried strawberries
1/2 cup dried cranberries
1 1/2 cup medjool dates (or use dried dates and soak in water for 15 minutes)
extra shredded coconut or seeds for rolling

Method
  1. Place the seeds/nuts in a food processor and chop finely. Add the coconut.
  2. Add the dried fruits a handful at a time and chop until fine. If the mixture isn't sticky enough, add 2-3 tablespoons of water and mix.
  3. Shape into small balls (about the size of a golf ball). It works best to press the mixture in your hands first, then roll.
  4. Roll the balls in shredded coconut or seeds.
  5. Store in the refrigerator for up to 5 days or in an airtight container for up to 2 months.
